Sometimes, a quick, light and healthy salad like this one here is all you need for lunch.

This yummy salad is pretty easy to whip up. I don’t have a name for this salad as the idea came to me when I wanted something light, nutritious, filling, yet quick to make with readily available ingredients. To my surprise, it turned out delicious!
What’s in it?
- 1/2 Cucumber 🥒 (chopped)
- 5 Cherry tomatoes 🍅 (chopped)
- A handful of mixed fresh herbs 🌿 (parsley, coriander, mint). I’ll say about 1 cup. You can use as much or as little as you like.
- 1/2 small red onions (chopped)
- 120g oven roast chicken 🍗
- 1/2 Avocado 🥑
- A few green olives (about 6)
Mix all ingredients together, et voila! That’s all there is to it.
I didn’t use any dressing, just a sprinkle of salt and pepper. But you can add some dressing to yours. A dressing of apple cider vinegar, a little olive oil, a squeeze of lemon, salt and freshly ground black pepper will be perfect with this salad.
